Herbs are frequently used, along with fruits and vegetables like plums, pomegranates, quince, prunes, apricots and raisins. Characteristic Iranian flavorings such as saffron, dried lime and other sources of sour flavoring, cinnamon, turmeric and parsley are mixed and used in various dishes.
